I saw that on the overview map screen there ist possibility put ammo together in a box or in a crate.

But I didn't find a way to make magazines out of the boxes / crates again. Am I missing something?

And also is there reason why no music is playing on the tactical view?

 You can use transformation or drop ammo box on your gun.

Ok, dropping on the gun is clear, but would be a pain in the ass with a full ammo crate.

What do you mean with transformation? On the inventory screen on the tactical map I can only transfrom them from boxes to crates or vice versa.

 You can right click on the crate, and select which type of magazine you wish.
The same interface method is used to transform items - fold stocks, switch flashlights etc.

 You left out the most important step. Left-click the image of the box/crate after right-clicking. (Pretty sure the transformation cog won't show up on ammo.)
