Is it possible for more than one battle to occur at the same time? I never noticed this happening in my several playthroughs. What does the game do when this happens?

The game tries very, very hard to avoid this exact scenario. This comes down to even increasing a travelling groups arrival time if that arrival would cause a second battle while one is already going on currently.

As loading a different sector will always delete the data of all soldiers not on our team (militia and enemies would then simply be numbers in the sector), the best possible scenario would be that upon exiting battle 1, joining battle 2, exiting battle 2 and then rejoioning battle 1 the battle 1 effectively starts anew, with your soldiers in the previous positions, but all still-exiting militia and enemies with full health, new gear etc..

This is the best scenario. It is more likely the game will simply crash or misbehave in weird ways - due to the way the game is coded, we can't have 2 sectors loaded at the same time.
