I have freed Drassen, talked to Father Walker and taken control of the mine. But when I go back to rebel hideout, they talk me like the quest is not finished. What might be wrong?

I still have the problem.
Several days passed (at least 5) since I gave a bottle of wine (even 2 bottles) to Father Walker.
But food still not arrived!
I talked to Father Walker on day 34. After second bottle he told me about "Queen Deidranna has a use for dead bodies", i.e. log was updated.

Now I'm on day 40 and the food still not arrived (food didn't arrive even on day 42).
BTW, on day 40 loyalty dropped from 14% to 0% in Drassen (only 1 day passed since last battle vs Deidranna army!).
Maybe loyalty dropped because food still not arrived?
Or because I didn't take any new sector?
How do you keep high loyalty?

Who spoke to the father Walker, your character or another mercenary ?
To realize the collection, IRA has to speak to the priest

The food quest doesn't require wine as far as i know, all you need to do is talk to the Fr. Walker with your Imp unless he requests Ira. He say's something like " i haven't seen Ira in a while..."
You'll know it works when he replies "What, Miguel... needs assistance" It takes about 2 days for the food to be delivered.
I noticed on your screen shot that you killed Doreen, if you have a Merc/imp with high leadership you can convince her to shut the sweat shop by being direct a couple of times with her. This will bring up the loyalty along with training militia. Higher Loyalty = Higher Mine Income.
Fighting alongside militia instead of letting them fend for themselves in a sector helps loyalty as far i know.

Man, i just noticed you didn't deliver the letter you're given at the start of the game, DAY 1, in Omerta, the reason for you landing there... until day 8...  lol... maybe that might be part of the problem. It will make the start of your next game a little easier too, you'll actually get Ira, not a great Trooper but a brilliant Militia trainer.

I don't remember exactly when I used Ira, but I think I talked to him first with my main character (he has 55 Leadership) and gave him 1st bottle of wine, then Ira talked to him (and gave him 2nd wine bottle).
This is what I found in "Patusco's JA2 Strategy Guide 1.3":
o 5.2.2 - Father Walker
When you have already talked to Miguel, in Omerta, you will be asked to somehow get food to all the people hiding in the basement hideout. The only way to do this is to find a certain priest (Father Walker) that is able to organize the food transport for the rebels. It will give you a raise in loyality, and access to recruit more rebels for your team, who don't cost a penny

Maybe Drassen is not freed, because it is red? What does red color mean?
Well your playing wildfire so that's a fairly new version/mod of Ja2, it's sounds like it's your first game. My advice would be to start again, wildfire is more difficult than the original version.
Hire a decent team with at least a week (2 weeks if possible) contract and begin on experienced not expert. I think if it's your 1st game it will be more than a challenge.
The first thing you should do is talk to Fatima/join rebels/recruit Ira.. Head for Drassen.
Drassen is red because of the loyalty level, by day forty you need to have a bit more done. Aim to take Drassen, execute Food quest, talk to the locals, after that it's a very non linear game.

Yes, this is the 1st time I'm playing this game.
In most games I almost always choose the most challenging level of difficulty, but this game's FAQ gave a big warning about difficulty. So, I took Experienced level.
But I already regret that I didn't take Expert level, because Experienced level isn't that difficult as I expected (at least combats isn't very difficult, especially after you manage to free Omerta in the 1st day, because that 1st battle is a very good training for a new player, because after that battle all other battles are easy).
The only mystery for me is loyalty. Loyalty bonuses from quests are so useless, because it is only a temporary reward (after several days there is 0% again  ).

You should update from version 5.0 to 6.04, the links above.
I think the reason you're finding it easy is because you are still in the starting area after 40 days, your IMP is on level 7 already, open the screen shot above and you'll notice the difference.
This game is more than just combat though, you need to use a small bit of economic and military strategies.
If you really want to carry on your current game head for San Mona and talk to people there, then make a move for another town/mine. You need to make some progress in order to maintain loyalty.I think you'll find one Imp and two rebels will soon be out gunned.
Make sure you have Militia trained in Drassen before you move on, for both loyalty and to fend off counter attacks. I can't see from your Screen shot if you have militia.
