Currently trying to decide b/w the M249 SAW or the SA 80 LSW. Stats-wise, the M249 is superior but the description of the SA 80 LSW reads that it mounts a 4x scope.
Is the accuracy of the SA 80 therefore superior to that of the M249?

It depends on your needs really.
I'm partial to the M249, as later in the game volume of fire becomes more important. I can't remember whether the LSW shoots 4 or 5 bullets in a burst, but Grey shirts will actually survive four bullets sometimes, and any enemy that survives a round will hurt you pretty good. With a good auto weapons merc in a good position and a rod and spring, you can count on 3 kills a turn, on enemies whose torsos are exposed, from an M249.
The downside is that those headshots through windows are a bit trickier. With my main merc I carried a rod/spring M249 and kept his rod/spring AK-107 from earlier in the game for a gun that can do low AP precision shots and still can fire off a decent burst without having to pay the draw to get the machinegun out in a tight situation.
The SA80 LSW is a good compromise if you just want to take one gun- more accurate, if a tad slower, for single shots than an assault rifle, and good for the bursts.

We have the same style of play, but with one real difference...I like to rock'n roll with the SAW, PK, RPD and RPK! harharhar!
