Do the builds work only on the english version or can I use the german or russian one?

The English Ja2.exe works with other language versions too. However, you get English text for most stuff.

Audio will be from your original game version (included in the corresponding .SLF files) unless there are specific audio files that come with the SCI. Those will override the originals files. I haven't noticed anything bad so far. I'm playing with the German game version + English exe myself.
